Black garlic is made by heating garlic at over 140F for more than 30 days. In food science terminology, this browning is caused by the Maillard reaction. The natural carbohydrates in the garlic break down, along with the proteins, and chemically react in a delicious and naturally complex changes, that creates not only amazing flavors, but also enhances the already wonderful health benefits of regular garlic. Black Garlic originated in Asian cuisine and is now being adopted and incorporated into a variety of cuisines. Raw garlic is too harsh to eat, but during black garlic aging process, these harsh notes are converted into delicious sweet and "umami" (meaty) flavors, with complex aromas including balsamic vinegar and tamarind.
